« Duck with honey sauce

  • 1 young duck (approx. 1.5 - 1.8 kg)
  • 4 oranges
  • 2 spoons butter
  • 2 tablespoons olive oil
  • 2-3 spoons liquid honey
  • 2-3 teaspoons potato starch
  • salt, pepper

Preparation: Blanch the oranges, cut one of them into slices and grate the peel from the other. Squeeze the juice out of the oranges. Rinse the duck, rub it with the orange peel and sprinkle with spices. 

Set aside for 1 hour in the refrigerator. Melt the butter. Add olive oil and orange juice to the butter. Cover the duck with a portion of the marinade. Then put the duck in a frying pan and roast for approx. 2 hours - first 20 min. at 200°C, the remaining time at 180°C. While roasting, pour the marinade and later the drippings over the meat. Pour the sauce into a pot. Mix flour with 2 tablespoons of water and the drippings. Add to the rest of the sauce and bring to a boil. Add honey to taste. Cover the duck with orange slices. Serve the gravy separately.
