« Guinea fowl roulade

Ingredients:
- 1 guinea fowl (1.3-1.5 kg)
- smoked bacon
- 2 cloves garlic
- marjoram
- salt, pepper
- paprika
Preparation: Rinse the guinea fowl, remove the bones in one piece from the meat together with the skin. Gently pound the meat with a mallet, sprinkle gently with salt, pepper, marjoram and paprika and rub with crushed cloves of garlic. Place the sliced smoked bacon onto the guinea fowl, carefully roll it up into a roulade and wrap it in aluminium foil. Put the roulade on a baking tray or in an open roasting pan and put it into a preheated oven. Roast at 150 °C. for approx. 45 min. Then unwrap the foil and continue baking for 15 minutes at 180°C. Serve sliced and decorated with boiled vegetables and parsley.
