« Goose baked in sour rye soup

Ingredients:

  • half a goose
  • 2 tablespoons flour
  • 2 cups fermented rye flour (can be powdered)
  • 150 g smoked bacon
  • 2 onions
  • 5 cloves garlic
  • 1 teaspoon marjoram, frying fat
  • 1 teaspoon salt

PreparationClean, rinse and dry the goose. Divide it into portions and rub with crushed garlic, salt and marjoram, and set aside for an hour. Sprinkle with flour and fry in hot oil. Put into a roasting pan, add the diced bacon (fried in a skillet), chopped onions and pour in the fermented rye flour. Cover the roasting pan and put in a preheated oven. Bake at 180° C for approx. 2.5 - 3 hours to obtain the desired softness. Baste with the drippings and water. At the end of roasting, remove the lid from the roasting pan. Place the goose in a deep dish, cover it with the drippings and garnish with black olives and basil leaves. Serve with boiled potatoes.
